• 20 (1 kg) fresh large prawns
  • Cornflour
  • 1 egg white
  • 1 cup shredded coconut Oil
  • for deep frying

Peel the prawns and beat the white a little. Toss the prawns in cornflour and shake away the excess. Dip the prawns in the egg white and then in shredded coconut.

Just before serving, deep fry the prawns in hot oil until lightly browned. Serve the dish immediately.
